Having a registered MIME type provides a guarantee to various internet servers and clients that data identified as text/org will be org documents. This means they can be programmed to take the appropriate actions for data presentation.
For example, a properly formatted email may actually include a plain text message and a message formatted with HTML. Depending on your email client, it will only present one of those two formats to you.
Having a official MIME type for org mode will make it possible, for example, to configure the mutt email client so that new messages are composed in org mode and include an html export and plain export alternative for other applications that might prefer those types, but the original org source will also be retained in the message for clients that prefer it.
